Chinese Cooking Class (CCC)

About Our Class

The Chinese Cooking Class (CCC) is an 18-week intensive training program focusing on the general study of cooking and related culinary arts to prepare individuals for a variety of jobs with the food service industry. Coursework is centered upon current food and beverage industry standards of food preparation, cooking and plating techniques, equipment operations and maintenance, sanitation and safety, communication skills, applicable regulations, and principles of food service management.

 

Students enrolled in the Chinese Cooking Class are required to enroll in ESLV 3814 - ESL for Chinese Cooking at the City College of San Francisco or submit proof of English proficiency.

 

Training course content includes

  • Ingredient preparation of meats, seafood, vegetables, and dry foods

  • Proper handling, measurement and usage of various spices and sauces

  • Knife cutting skills and techniques for cooking and presentation

  • Preparation of soups, stocks, hot and cold sauces

  • Cooking methods such as deep-frying, stir-frying, braising, scalding, and steaming

  • Knowledge of proper hygiene, food safety standards, and kitchen safety and sanitation


Students who have completed our program currently work at M.Y. China, ChinaLive, Sodexo, Sheng Kee Bakery, Burma Superstar, Harborview Restaurant, Lee’s Deli, and other local restaurants and establishments. Looking to hire our students? Let us know here!

Class Times: Monday to Friday, 8:00AM to 2:00PM

ESL Course: 8:00AM to 9:50AM

CCC Program: 10:00AM to 2:00PM

Language of Instruction: Chinese

Eligibility

To be eligible for the Chinese Cooking Class, you must be:

  • A legal U.S. resident with authority to work in the U.S. (i.e. valid Social Security Card)

  • 18+ years or older

  • Looking to change professions or find employment

Fees & Funding

The total charge for the CCC program is $5,500. This amount covers the full period of attendance (18 weeks).

 

Qualified students can have their tuition and fees subsidized by the Office of Economic and Workforce Development (OEWD). Students who do not qualify for subsidies but are otherwise eligible to enroll in our programs may do so if the total charge is paid in full by the first day of the program session.
